Kurosawa Maruto Kimoto Junmai Daiginjō SAKU1 is produced using the SAKU1 yeast developed from the SAKU13 project. The sake is brewed with 100% Hitogokochi rice grown in the brewery’s own rice fields, and follows the traditional kimoto method.

A spicy nose with notes of alcohol and nuts, alongside sweet hints of dried fruit, apricot and honey. The entry is gentle and creamy, with a full body and silky texture. At room temperature, it begins with a light astringency. A layer of sweetness follows, then opens into a flow marked by slight acidity. The mid-palate recalls elements of umeshu, with a mildly viscous texture. Toward the end, a sudden lift of spice appears, rising through the nose and filling the mouth, leaving a faintly sticky sensation around the lips. The sweetness remains balanced by a well-timed spiciness.

The texture stays smooth. A firm bitterness develops, followed by a sweet-and-sour note as citric acidity coats the tongue. When warmed, the profile shifts toward a richer combination of sweetness and spice without off-notes. Chilled, it shows a brighter sweetness, light spice and a cleaner, more refreshing finish. The sake shows a relatively sharp acidity overall, giving it a dry edge and a lingering acidic finish. It works best slightly chilled to room temperature rather than very cold. The finish is long and clean, with a peppery aftertaste.
