Koshitanrei is the culmination of 15 years of research and development to create rice suitable for cultivation in Niigata, with quality exceeding that of Yamadanishiki. It combines the excellent brewing characteristics of both the paternal rice 'Gohyakumangoku' and the maternal rice 'Yamadanishiki', both representative of Niigata Prefecture. It reflects a high whiteness and low protein content, resulting in a light yet full-flavoured sake. It is a masterpiece that maximises the rice's natural flavour. It has an elegant, refreshing aroma and a rich flavour that spreads down the throat with a crisp finish. Yukitsubaki Brewery was founded in 1806 as Maruwaka Brewery (丸若酒造) in Kamo, Niigata Prefecture. Kamo (加茂市) is located almost in the centre of Niigata Prefecture and has a beautiful townscape with the Kamo River flowing through the heart of the city, the nature-rich Kamo Mountain Park, the historic Aomi Shrine, and many temples with historical significance. It is called "the little Kyōto of Hokuriku" and is a beautiful city full of charm. Adjacent to the brewery is Kamo Mountain Park, which is famous for its natural habitat of "Yukitsubaki", the city flower of Kamo and the prefectural tree of Niigata. "Yukitsubaki" blooms with the snowmelt after enduring the harsh winter of the snow country. Referring to the flower, the brewery named its sake "Koshi no Yukitsubaki". Since 2011, Yukitsubaki has been a "Junmai brewery" (純米蔵 Junmaigura), specialising in high-quality Junmai, Junmai Ginjō sake, and Junmai Daiginjō sake. While preserving the traditional handmade method, Yukitsubaki Shuzō has also actively introduced the latest brewing equipment and adapted to the newest technology.
