An elegant, fruity bouquet with notes of berries and melon. The palate opens gently yet deeply, with a refined sweetness perfectly balanced by crisp acidity and a slight effervescence. A spicy rice aroma emerges mid-palate, leading to a long, zesty finish. As it warms to room temperature, the sake becomes rounder and more aromatic while retaining much of its acidity. The rice used, "Aiyama," once vanished but was brought back to life through the dedication of a passionate brewery — now, it's a highly regarded sake rice in the industry.
