Kamokinshū Junmai Ginjō Aiyama (賀茂金秀 純米吟醸 愛山) is a limited-edition sake crafted with Aiyama rice from Tōjō, Hyōgo Prefecture. Aiyama, often called the "diamond of sake rice," is prized for its luxurious quality. It is known for its rich sweetness and subtle bitterness. Yet, Kamokinshū's Aiyama offers a distinct experience. The bitterness noticeable in early spring, right after pressing, mellows over time, blending seamlessly with the refined sweetness to create a beautifully balanced flavour. Delight in the harmony of a refreshing ginjo aroma reminiscent of melon and muscat, paired with a crisp, silky-smooth finish — a true masterpiece to savour.

The brewery uses 100% domestic rice, 80% of which is produced in Hiroshima Prefecture, in particular, Hattannishiki, the representative brewer's rice of Hiroshima Prefecture, and Senbonnishiki for Daiginjō and Junmai Daiginjō. The remaining 20% of rice is from Okayama and Hyōgo: Akaiwa Ōmachi (produced in Akaiwa, Okayama) and Yamadanishiki (from Tōjō, Hyōgo).
