Golden hue. The nose is deep and expressive, showing ripe fruit, gentle sweetness, a touch of spice and faint lactic tones. The first sip is firm and expansive, with a full body and creamy texture that coats the palate with apple-like sweetness alongside sweet-and-sour berry notes, pronounced umami and well-judged acidity. Medium-dry in balance, it closes with a clean, crisp finish. An impressive junmai that prompted us to add 上川大雪酒造 to our brewery short list, and we came close to giving it five stars.
We kept the bottle in the sake fridge, but let it come to room temperature before drinking. It benefits from avoiding excessive chilling. The brewery recommends it slightly chilled (少し冷やして, 10-15°C), at room temperature (常温), or nurukan (ぬる燗, 40-45°C).
