Ikekame Junmai Ginjō Kurokabuto Yumeikkon Namazake 2022 BY (池亀 純米吟醸 黒兜 夢一献 生酒 2022BY) is made of Yume Ikken, a rice variety grown in Fukuoka, and Yamadanishiki (as kōjimai). The Kurokabuto Namazake is a little drier and spicier than the regular Kurokabuto, entirely made of Yamadanishiki rice. The secret of the brewery's sake lies in using "black kōji" (黒麹 kurokōji), a fungus used to produce Awamori liquor in Okinawa or Shōchū in Kyūshū but rarely for sake brewing. Kurokōji actively ferments citric acid and keeps the moromi (mash) strongly acidic, which prevents the growth of bacteria that may occur during the fermentation of the moromi. Therefore, it is suitable for sake brewing in warm regions.

Ikekame Brewery in Kurume, Fukuoka Prefecture, was founded in 1875 on the banks of the Chikugo River by the first-generation Genzō (池亀源蔵), an instructor and master swordsman in the Kurume Domain. Genzō was an enterprising man who devised a new brewing method using the water of the Chikugo River and contributed to sake brewing in the Chikugo region by sending out master brewers he trained. In May 2007, the brewery released its signature product, Kurokabuto (黒兜) Junmai Ginjō.

The finish is short but memorable, leaving an acid tingle that invites another sip.
