Himonoya Senkonari Tokubetsu Junmai Koshikimine is made of Miyamanishiki rice milled to 55% and F7-01 yeast. The label "Koshikimine" (甑峯) was created in 2016 and derives from the olden name of the Adatara mountain range.

Himonoya launched its new brand, Koshikimine, in 2016, based on the concept of the brewery's previous owner, who passed away the same year. Koshikimine is the old name of the nearby Adatara Mountains, part of Nihonmatsu—sweet and fruity nose with bitter notes. Senkonari Tokubetsu Junmai is full-bodied and rich, with a great deal of sweetness mid-palate that turns into delicate bitterness and umami. It has a long and sour finish. Very deep and elegant. This is undoubtedly one of the best tokubetsu junmai we have ever had.
