Himonoya Senkōnari Daiginjō (檜物屋 千功成 大吟醸) is made of Yamadanishiki milled to 40%. Although the label says ginjō, it is a daiginjō-class sake. It has a gorgeous aroma and a slightly sweet taste that can only be achieved by pressing the fermented rice mash in a wooden tank, which gives it a delicate and elegant flavour.
