Himonoya Junmai Ginjō Koshikimine (檜物屋 純米吟醸 コシキミネ) is made of Yume no Kaori rice milled to 50% and M310 yeast. The label "Koshikimine" (甑峯) was created in 2016 and derives from the olden name of the Adatara mountain range.

This sake is produced employing the "sase" method (佐瀬式 saseshiki), where the moromi (mash) is packed in bags by hand, then painstakingly stacked and slowly pressed from the top to produce the sake. As only a small amount of sake can be pressed at a time, this process is repeated in a time-consuming and laborious process until a sufficient quantity is finally secured.

Himonoya Brewery is the smallest of the four sake breweries in Nihonmatsu, Fukushima Prefecture. Founded in 1897, the Senkounari brand was named after the Sennari gourd of Toyotomi Hideyoshi , the predecessor of the Niwa clan that ruled the Nihonmatsu Domain subsequently. Senkounari (千功成) means "Thousand Merits".

The brewery offers tours to groups of up to ten people that must be reserved at least one day in advance, Sundays and holidays only by appointment. The tour takes about 30 minutes and includes a sake-tasting (500 JPY).

Fruity nose (apple, grapes, pear) with spicy notes. Creamy and viscous texture, rich body with lots of depth, well-rounded, slightly sweet mid-palate with a refreshing bitterness. It has a long and mild finish with a slight sour tingle. Top notch!
