Instead of pursuing extreme polishing, the brewer uses organically grown Yamadanishiki from Okayama, certified under the Organic JAS standard, and mills it to 70%. This choice keeps the outline and weight of the rice intact, allowing its character to come through without heaviness.

The sake is bottled as a muroka genshu, meaning it is neither filtered nor diluted. Nothing is adjusted after fermentation, so what ends up in the bottle reflects the raw balance of the ingredients and the brewing process itself. The brewery uses Akita Yukiguni Yeast UT-1 (秋田雪国酵母), which performs well under cool conditions. Careful temperature control keeps the aroma restrained and precise, while emphasising a crisp finish. At around 17% alcohol, it retains the presence and fullness expected of an undiluted sake, but remains composed at the table rather than assertive.

The entry is transparent and smooth; the flavour is calm and dry, with an aftertaste that is sharp and tidy rather than lingering sweetly. The label reflects this approach: a recycled-paper texture, the bold "Asakura" logo, and clear indications such as "Yamada Nishiki" and "organically grown rice," without unnecessary ornament.

This sake is designed to adapt to temperature. Light chilling around 10–14 °C highlights its sharpness; room temperature brings out more of the rice's depth; and gentle warming at 30–35 °C softens the profile and reveals a mild sweetness. It suits everyday meals, particularly Japanese dishes such as kiritanpo hot pot, simply seasoned Hinai chicken, or mountain vegetable tempura, as well as foods with salt, smoke or fermentation notes like grilled vegetables, lightly salted chicken, or smoked pickles with cream cheese.

Quiet nose, with hints of dried fruit, a soft lactic note and a touch of something herbal in the background. The first sip is clean and a little brisk, then it opens up into a broader, steady feel that you'd expect from Yamadanishiki. It stays dry and understated, with a finish that clears quickly. At around 10–14°C, it felt firm and sharp; at room temperature, it became well-rounded, with the rice coming through more clearly. Gently warmed to around 35°C (人肌燗 hitohadakan) and 40°C (ぬる燗 nurukan), the texture smoothed out, and a soft sweetness appeared. Considering it's only milled to 70%, the clarity is impressive. The organic Yamadanishiki from Okayama and the Akita Yukiguni yeast work well together, giving a sake that stays firm and dry but finishes softly, making it easy to enjoy with food.
