Azakura Junmai Ginjō Akita Sake Komachi Extra Dry (+10) Muroka Genshu (阿櫻 純米吟醸 秋田酒こまち 超旨辛口+10 無濾過原酒) is brewed with Akita Sake Komachi rice and is Azakura's primary food-oriented sake. It is designed to be enjoyed across a broad range of serving temperatures, from chilled to gently warmed. Bottled as muroka genshu (無濾過原酒), it is neither filtered nor diluted. The composition emphasises a balance between rice-derived umami and a clear, firm acidity, resulting in a dry profile with a clean finish. The aroma remains restrained. The sake is intended to pair widely with food, without restriction to a particular cuisine, and can be used both during meals and on its own.

Azakura Shuzō is a heritage sake brewery founded in 1886 in Yokote, Akita Prefecture—a snowy town renowned for its traditional kamakura snow huts. Steeped in history, the brewery shares its name with Yokote Castle (横手城), the city's emblem, which is also known by the poetic name "Azakura-jō" (阿櫻城).

Blessed with the natural bounty of the region and sustained by the deep dedication of its brewers, Azakura Shuzō stands as a proud testament to over 130 years of sake-making tradition. Under the guidance of master brewer Terui Toshio, representing the prestigious Sannai tōji guild, one of Japan's five great brewing schools, the brewery employs the refined techniques of kan-zukuri, Akita's signature method of long, low-temperature fermentation during the coldest months.

Crafted exclusively with locally grown Akita rice, Azakura's sake is distinguished by its elegant aroma and smooth, rounded flavour. The result is a clean, balanced profile that invites another sip, an enduring hallmark of this time-honoured brewery.

A mild, refreshing nose with a touch of spice and faint hints of chocolate. Full-bodied with a creamy texture. The palate opens with a fruity sweetness reminiscent of ripe apple, then shifts toward a fuller umami with noticeable acidity. The finish is short and clean. Served chilled, the acidity comes across crisp. At room temperature, the edges soften while the acidic impression remains. The balance between umami, rice sweetness and acidity is clear. By the third day, the crispness has largely faded, with more fruit sweetness and a broader profile, while a light peppery finish remains. It pairs well with food, including savoury dishes, and also drinks well on its own.
