Who is the subject? That sentence sounds unnatural as a single sentence without it.

でも 今 私の道楽を 手品 です。

を basically indicates the object of action verbs. Probably you want say でも今私の道楽は手品です?

あなたは 手品 を好きですか？

It's not incorrect, but 手品が好きですか is more common. Adjectives that express emotion or sense like 好き, 嫌い, 痛い take the object marker が.

難しい け ど楽し です。

難しいけど楽しいです。
The polite form of i-adjectives is "the dictionary form + です".

これは正しい思わ ない です。

これは正しいと（は）思わないです/思いません。
Nouns/Phrases/Clauses can't be attached directly ot 思う.

hey guys I had a thought..

an insight if you will...using「が」。。 how about using it in the sentence like this...

That's the heavy one. would you use ga here ? how would you say it in japanese?
you would use ga, right? because you are specifying which one. now using 「は」,
it would be only to bring up the new topic... so が is answering a silent question, which is the heavy one? am I right?

重いの would be "heavy one", as in 重いのをください ("please give me the heavy one."). You don't need が or は at all, unless the heavy one is the subject or topic. If you say "that's the heavy one," then yes, I'd say you would use が -- あれ/それが重いのだ(よ). の here is a pronoun, like "one" in English.
