Freezing and then defrosting red wine

Can anyone tell me how it affects the taste?

Unfortunately, I have no direct experience with freezing any sort of wine. To tell the truth, it is not something I would have considered doing, even when I was still imbibing. However, I got a surprising number of hits on "freezing wine" with most of them saying it is okay to do it.

It's not something I had considered doing either, more of an oversight leaving it in the freezer for too long. Luckily, while a pleasant bottle of wine that I hoped still to be able to drink, it wasn't a nice 1787 Chateau Lafite!!

Still, those links were very interesting - through a mishap comes good knowledge in this case! It's certainly news to me that a half-finished bottle can be frozen for later on, and even more so that freezing wine may even improve the flavour!

I shall report back once i've sampled the aforementioned vin rouge.

It tastes alright!

A bit fruitier and, yes, slightly less acidic than I expected (being no expert, however).

I didn't shake the bottle first (forgot) to fully re-acquaint the various constituents, though, that may well have an impact from what i've read (thanks to Anohito...)

So far I can advise most strongly that freezing wine is OK (but you can't re-freeze it apparently - a great shame as I'm off to bed after this first glass).

If you freeze alcoholic beverages and then strain the unfrozen liquid from the ice you have super concentrated alcohol. That's where "ice" beer comes from. It is illegal in some areas to actually concentrate alcohol in that manner. I used to home brew beer and did a few "experiments"! :)
