Which one is more popular, or different usage?
電話をしていらっしゃいます
電話をなさっています

新聞を読んでいらっしゃいます
新聞をお読みになっています

Can any verb be converted like this?
電話をおしになっています?? (電話をする)
電話おしになっています?? (電話する)

Are the following available or does one have to use お休みになる for both?
お眠りになる (sleep)
お寝になる (lie down)

The former is more common. The latter is not wrong, but I think it's rarely used.

新聞を読んでいらっしゃいます
新聞をお読みになっています
Those are equally common, and the same usage.

お寝になる (lie down)
Those are invalid, as I explained in another thread.

お眠りになる (sleep)
This is valid, but お休みになる is more common.

You didn't comment on this one.
Could I presume that this one is grammatically correct as an honorific form but can't be replaced by お休みになる perhaps because 寝る is not the same as 休む?
 
I already answered it. See more carefully the last line in the quote right above my reply "Those are invalid, as I explained in another thread" again.

お休みになる works perfectly fine as an honorific verb of 寝る. Notice that 休む can also mean "to sleep/go to bed" other than "to rest" (and 寝る can also mean "to lie down" other than "to sleep").
