I have a question, regarding when I should use the volitional form.

For Example:
Question: 一緒に喫茶店に行かない。

Answer: うん、行こう。

or

Answer: うん、 行く。

does it really matter if I use, 行く or 行こう in this case?

行く would be understood, but normally one replies
うん、行こう
when asked 一緒に.
 
喫茶店に行きましょうか
うん、行こう

仕事(しごと)が終(おわ)りましたから、飲(の)みましょうか
はい、はい、飲(の)みましょう
