「その前に全員で辞職してくれても構わない。いずれにせよ、再就職の面倒は<ラタトスク>が見てくれるということで話を付けてある」

Hi. I have two questions about the dialogue.

1. What is the usage of the bold わけ?
2. What is the usage of the bold ということで? It doesn't seems to mean "because" or "by calling it" here.

わけ performs as a sentence ending particle there, similar to の in meaning/nuance.

～ということ is close to ～という話/約束/結論 there, and the preceding clause 再就職の面倒は<ラタトスク>が見てくれる is the contents of 話/約束/結論. As a result, ～ということで話を付けてある means that the speaker already arranged with ラタトスク for their (= the addressee's) reemployment, i.e., ラタトスク will employ them.

で is a particle. The closest function would be 期限, 限度, 基準, 条件 or 限定.
e.g.
裁判は敗訴で決着した。
交渉は決裂で終わった。
オリンピックは開催（するということ）で決まった。

に also can be used for the last two examples above, but it can't for the first one or your example. It differs depending on the main verb.
