Firstly, let me apologize for asking a question, that for many, will be both elementary and repetitive. I will be brief so that I dont waste too much of your time.

My question arises from the following:

私の友達はくだものがすきです。
私の友達はくだものをすきです。

What role does the particle が, を play in the translation of the sentences? Both, in my opinion, roughly translate to the same thing, but what is the clear difference in meaning?

Those sentences are the same in meaning. が and を both indicate object. を is preferred in some cases, for instance making clear the direction of emotion as same as ~のこと.
e.g.
君が好きな人
a person you like or a person who likes you

君を好きな人/君のことが好きな人/君のことを好きな人
a person who likes you
