答は鯖（saba）(mackerel) です。
魚へんに青いと書いて鯖です。背中の色が青いからこういう漢字になったんでしょうね。

通常はカタカナで書くんだと思いますが、平目と書くこともあると思います。

辞書を見たら英語ではflatfish, flounder, sole, brill とたくさんの呼び名が付いていました

Yeeees, it's a flat shaped fish. Now I guess everyone got the answer, don't you? It's commonly written in katakana, or sometimes with the jyou-you-kanji 平目 but this kanji of the combination of 魚(fish) and 平(taira = means "flat") is also OK to use. So the answer for #2 is ヒラメ(hirame)
Now, let me introduce a yunomi-jawan (湯飲み茶碗)(a cup that Japanese people usually drink green tea with) with lots of kanji with "sakana-hen". Those are mostly found in sushi restaurants and sometimes they give them to their customers, but I sometimes see them a stores as well.
Maybe this can make a good gift for the people who are learning Japanese, don't you think?
