Hi there, could you help me to discover what's the better japanese term for the word simplicity (in a design context)???

Try the katakana for the word simple. It has been applied that way in Japanese (as compared to giving it a meaning of easy, as it can have in English).
Do a Google image search for the word シンプル (shimpuru) and you'll get an idea of it.
