Put the two Kanji together you have the meaning of "Tasting good" but the regular pronunciation would be "Mimi" or "Mi'aji", so it was modified to take the pronunciation "Oishii".
There are other examples of irregular Kanji pronunciations like
Anata = you
Okami = female proprietor
(o)Miyage = a gift
Furusato = home town, native place
The Kanjis do not match what you'd expect based on the sounds of the words.
Kanji for "Anata" (窶ケM窶「テサ) looks like it should be read "Kikata"
"Okami" (ツ鞘?板渉ォ) should be read "jo-shou"
and
"miyage" (窶忱ナスY) looks like "dosan"
"Furusato" (ナ津娯?ケツス) looks like "ko-kyou" and it is acceptable to read it as such.
