how to say both

I know there are many ways to say both in Japanese but I was wondering about this case.
Say someone asks...
すしとさしみとどちらが欲しいですか
How can I say both please.
Would it be 両方ともをお願いします。

That's fine. You might wish to use いただきます or いただけますか for your verb, though.

両方, 両方を or 両方とも are all fine, but 両方ともを is hardly used in that case.

So 両方をいただきます would be a more appropriate way to respond.
When there are more than 2 choices would I use.
それぞれいただきま one of each please?

どちらか一つ (one of two) / どれか一つ(one of more than three)（を）お願いします。

それぞれ means more likely "all of them".

I suppose if I was asking for something 両方をいただきますか would be more polite.

いただく is a humble verb(謙譲語). You can't use it when the agent is the recipient of respect.

Oh, sorry. I misread your post. You mean "if I was asking for something, 両方をいただきますか would be more polite". In that case, the potential form should be used.
