If someone worked in Hospitality (restaurant, hotel sector) and can share some information with me, answer my questions about how this sector is setting up in Japan, so I will be definitely thankful and I will not leave this person without reward!

Hi Dani and welcome to JREF. Since no one else has replied to you , I have a few questions that might help us help you. Do you speak & read Japanese at a high level? Have you checked into any visas you might need to live & work in Japan? Have you considered the pandemic and how it might prevent you from even entering into Japan? Do you have anyone now in Japan who can help you with your dream? Do you have a very large amount of cash to invest? Have you thought about coming to Japan to see if you will like living & working here for a long time? There are probably thousands of restaurants in the Tokyo area , what type do you have in mind to make yours stand out and be successful? Just a few of the things to think about and help us answer questions about your dream.

One other thing to add, and related to @Uncle Frank 's question about having someone in Japan I suspect, foreign businesses require Japanese citizens to be the business manager last I read on the subject.
