I hope this is valid question on this forum: do Japanese bow or incline their head when entering a dining establishment? Or necessarily even say anything to the common greeting from staff? Thnak you.

No need to do anything. Most Japanese customers, accustomed to their godlike status as customers, ignore the staff, so a smile and a 'hello' will be taken well.
 
I greet customers with the traditional way. Some look happy to see a white man. lol I keep my thoughts to myself on the others, but my eyes do roll up. lol
