Do some hiragana have more than one way of writing them?

Hi. :? um.. I just started learning Japanese writing. Today. When I was writing out sa, shi, su, se, and so... I noticed that the book I was using had "sa" written in three strokes, but several site's charts (including this ones) had "sa" written in just two. also "ki" could be written in two or three strokes as well. Which one is more correct??? This is probably a dumb question because I'm new at the language ehe. anyways thanks.

while it is understandable both ways, it is common for the hook to be connected only in printed text; handwritten characters almost exclusively have the hook disconnected in き and さ. for your handwriting practice, do it like this:
