OK so I have finally started the game, and the first thing I see is another intro.

100ねんがすぎた。ちじょうはモンスターに しはいされていた。
ひとびとはモンスターにおびえながらも よりそい あって
むらをつくり みをまもっていた。
ぜつぼうとふあんのひびをいきるひとびとのあいだに しぜんに
そしてかくじつに きゅうせいしゅでんせつが かたり つがれていた。

I understand it all except those red words.
 
寄り添い合って (合う forming compound verb)
語り継がれて (look up 語り継ぐ)
 
I found 語り継ぐ, but the other is nowhere to be found. I'm going to guess the meaning is unchanged by adding 合う？

After the game character wakes up inside a cave and leaves and old man sees him and runs off. I go after him and he says this:
おお あんたか。
さっきは にげたりして すまなかった。
そこのいえには ふうしゃごやの
ばんにんがいるよ。くちはうまいが
いねむりばかり。
セブーさまも おこまりのようだ。

にげたりして is this some form of 握る？
ばんにん does this mean guard?
くちはうまい I have no clue about this one :/

Edit: I meant 逃げる not 握る.

I just want to mention (since I forgot to do so) that I understand the tari verb ending.

テレビを見たり買い物に行ったりする
I do things like watching television and going shopping

But the above quote: さっきは にげたりして すまなかった contains only one verb, so it's not listing verbs. Does にげたりして mean "something like running away"?

Making a full translation of that single line I would say "Sorry for doing something like running away back there".

口がうまい - he's skilled with his mouth i.e. he's a good talker.
ばんにん can be 万人 or 番人, but the context shows that it's indeed the latter. Every game needs a sleepy guard.
-tari indicates that the listed item(s) are not exhaustive, like in your example: you also do things other than watching TV and shopping, but you don't mention them. Similarly the old man is sorry for "running away and such".

So this would be translated as "He's a smooth talker but he's just fallen asleep."?

セブーさまも おこまりのようだ。
And would this be "Sebuu-sama seems to be worried"? Presumably about the sleeping guard, and is worried the right word to use here?
 
"Just fallen asleep" would be 居眠りしたばかり. 居眠りばかり uses the other meaning of ばかり: he's dozing off pretty much all the time. So instead of an overview of recent events, we get a general description of this guard: he's a swift talker but not very good at his actual job.

困る also has the meaning of being troubled or bothered by something. That is, it's not so much that セブー is worried about the guard's well-being; rather, the guard's sleepiness is (seemingly) causing them problems.

Yeah I was thinking something like "annoyed" would be better then "worried" but I thought it might be less accurate.

I have some confusion over 水辺. It seems it can be read as either すいへん or みずべ, is one more popular then the other?
 
The latter. すいへん is only used in some kind of compound words, e.g., 水辺公園 as in a dictionary.
 
Just talking with a random person, they say this:

さむくないですか？ ここは つめたいかぜが やすむことなく ふきつけます。でも わたしたちは このくらいのさむさは へいきです。
Isn't it cold? The icy winds blow relentlessly up here, but the cold doesn't bother us.

How accurate is that?

I know うけとり means 'receipt' but I don't understand how the word is used here.
つくし I assume is 尽くし？
あつい seems to have several meanings, I honestly can't figure out which one is used here.

Well, that last sentence is super hard :/ I'm just gonna have to take it piece by piece.

Could someone tell me the meaning of this red part, I know it's the quotation particle followed by regular old の, but maybe I'm missing something about it.

Does the blue part mean something vaguely like "everyone has lost their faith"? OR maybe "there isn't anyone of strong faith left"?
 
"The -masu stem of a verb + な" is strong imperative, so the nuance is more likely "Take it."

～ってのは is a colloquial/slangy form of ～というのは, and ～というのは…のことだ is a structure for definition/explanation.
e.g.
賢者というのはかしこい人のことだ。
Sage means wise person.

You missed parsing the sentence and interpreting the meaning of 尽くす.
賢者ってのは、人々のために尽くし、みんなの信頼（が）厚い方たちのことだ。
The two clauses 人々のために尽くし and みんなの信頼（が）厚い both modify 方たち. (The -masu stem 尽くし is used to continue the clauses here. Thus, it can be reworded to みんなの信頼（が）厚く、人々のために尽くす方たち.)

I thought I was interpreting 尽くす lol. But I see now where I went wrong with my understanding of the word.

賢者ってのは、人々のために尽くし、みんなの信頼（が）厚い方たちのことだ。
The sages are people that devote themselves to the public and they all have great faith.

How is that?
 
みんな refers to people in general there, thus, みんなの信頼（が）厚い（方たち） means "(people) everybody have great faith in."

I just want to mention the reason I'm not parsing the text is because in this game the text is all kana, and I may make a mistake and type the wrong kanji and change the meaning. I try to write it out exactly as I see it on screen, including spaces.

Still just walking around seeing what people say, one man (the elder) says this:

おお あんたか。 めざめのどうくつより まいられたひとは・・・うむ・・・いいつたえのとおりじゃ。
てんの よびごえに でんせつの せんしが めざめる。 ４ほんのけんを たずさえひとびとを ひかりに みちびくと・・・

This red part seems to mean (literally) "the person that came out of the cave he woke up in", is that right?
What is omitted fro the end of the second line? (just for curiosity).
 
目覚めの洞窟 is the name of the cave; Cave of Awakening. The rest is OK.

I remember from the intro 目覚めのシーン which was translated as "The scene where you wake up", I just figured 目覚めの洞窟 would be "the cave where you wake up".

OK, so I may now be able to translate the whole thing

I'm not too sure about that final sentence.
