Yonetsuru Karakuchi Migaki Gowari (米鶴 辛口磨き五割) is made of non-graded domestic Togai rice milled to 50%, which is why it is classified as a regular sake (futsushu) and not a junmai daiginjō. It has a nice daiginjō flavour and a crisp aftertaste. It can be paired with light seasoning dishes or seasonings with umami flavour. It is recommended to enjoy it lukewarm or hot in the cold season.

Yonetsuru Brewery in Akita was founded by Umetsu Ihei (梅津伊兵衛) in 1697, at the end of the Genroku era. He worked with great passion and ambition in an environment blessed with clear water and fertile soil. Back then, there were 32 sake brewers in Yashiro-go (referring to the towns and villages of Takahata, Yashiro, Wada, Kameoka, Kamigo, and Futai-juku), with the Umetsu family leading the local sake industry. In the late Edo period , they prospered as the official sake brewery of the Uesugi family , who ruled 150,000 koku of the Yonezawa domain. The eleventh-generation brewmaster was a pioneer of the ginjō sake boom, while the 300-year-old commitment to sake-making was inherited by the twelfth-generation tōji, who has been at the helm since 2007.

Yonetsuru Karakuchi Migaki Gowari is made of locally grown Yukimegami ("Snow Goddess") rice milled to 50%. While this would be technically sufficient to classify it a daiginjo, the brewery used what is known as Togai rice (等外米), brown rice that has been graded as non-standard rice under the inspection standards of the Agricultural Products Inspection Act; it is generally considered scrap rice. Graded rice or not, this sake - a limited edition and technically a futsushu - is a delight for the palate, with a crisp and balanced flavour that combines acidity, bitterness, and fruitiness. It leaves a subtle tingling sensation at the end. It is a lively, refreshing drink with meat and savoury dishes. We enjoyed it with a seabream hotpot, which was an excellent complement!
