Yonetsuru Brewery in Akita was founded by Umetsu Ihei (梅津伊兵衛) in 1697, at the end of the Genroku era. He worked with great passion and ambition in an environment blessed with clear water and fertile soil. Back then, there were 32 sake brewers in Yashiro-go (referring to the towns and villages of Takahata, Yashiro, Wada, Kameoka, Kamigo, and Futai-juku), with the Umetsu family leading the local sake industry. In the late Edo period , they prospered as the official sake brewery of the Uesugi family , who ruled 150,000 koku of the Yonezawa domain. The eleventh-generation brewmaster was a pioneer of the ginjō sake boom, while the 300-year-old commitment to sake-making was inherited by the twelfth-generation tōji, who has been at the helm since 2007.
