Yamamoto Shuzōten Dokara Junmai (山本 酒造 店 ど辛 純米) is a super-dry junmai sake from Yamamoto Brewery in Akita Prefecture and one of the brewery's best-known regular products. Brewed to an impressive SMV of +15, it was designed as a sharp, food-friendly sake with a clean, refreshing character.

Made with locally grown Ginsan rice polished to 65%, the sake is brewed using the brewery's proprietary "Sexy Yamamoto Yeast" (セクスィー 山本 酵母). Although distinctly dry in style, it retains balance and drinkability, opening with a gentle rice sweetness and soft umami before leading into a crisp, firm finish. Bright acidity and clarity are emphasised over richness or heavy sweetness.

With an alcohol content of around 15%, Dokara is especially well-suited to meals and pairs naturally with grilled fish, meat dishes, and savoury or salty foods.

Yamamoto Brewery traces its origins to 1901, when the brewery was founded in what is now Happō (八峰町) in Akita Prefecture, between the Sea of Japan and the foothills of the Shirakami Mountains (白神山地), a UNESCO World Heritage area known for its pristine forests and spring water. Yomonosuke Yamamoto, a local landowner, established the brewery and initially produced sake under the Shirataki (白瀑) brand.

For much of the twentieth century, the brewery grew steadily thanks to strong demand in northern Japan and Hokkaidō. A large amount of its sake was reportedly consumed by coal miners in Yūbari, Hokkaidō. However, when Japan shifted from coal to petroleum in the 1960s, demand dropped sharply. The brewery then shifted direction, focusing on smaller-scale production and higher-quality sake, including premium daiginjō for the restaurant market.

The brewery entered a difficult period during the 1990s after several successors and family representatives died. Sales fell dramatically, and the business's future became uncertain. The turning point came when Yamamoto Tomofumi (山本 友文), the current sixth-generation head of the brewery, returned to Akita in the early 2000s. Before entering the family business, he had studied in the United States and worked in Tokyo's music industry as an artist manager and concert producer.

After taking over the brewery, Yamamoto introduced several major changes. In 2007, he ended the traditional tōji (杜氏) system and began overseeing the brewing himself. Around the same time, he launched the "Yamamoto" brand, which soon became known for its modern style, bright acidity, and refined character reminiscent of white wine. From 2010 onward, the brewery also switched entirely to junmai sake, no longer using added distilled alcohol.

Today, the brewery is regarded as one of Akita's more innovative sake producers and is a member of NEXT5, a group of progressive breweries in the prefecture. The sake is brewed using very soft spring water from the Shirakami Mountains (白神山地), supplied through a private pipeline installed in 1932. In recent years, the brewery has also expanded into craft gin production and operates LABO and CAFÉ YAMAMOTO, combining a modern, experimental spirit with Akita's long brewing tradition.

A surprisingly fruity and expressive nose with citrus and gentle spice notes. The entry is mild and refreshing, with a medium body and silky texture. Bright citrus character appears immediately on the palate, accompanied by slight astringency and bitterness.

Although classified as an extra-dry sake with an SMV of +15, it initially displays a faint sweetness. Once tasted, however, its sharp dryness and spicy character emerge all at once, creating a striking contrast between the soft opening and the crisp, powerful finish.
