An intense nose of green apple and pear compote. The entry is vibrant, with a slight effervescence. Medium-bodied with a velvety texture, it has a fresh, lightly tingling quality that conveys the energy of fermentation. Fruity flavours are balanced by the mineral, savoury rice character associated with Tedorigawa, while soft acidity leads into a crisp, clean finish. Its pear-like fruitiness and refreshing acidity make it particularly well-suited to food, especially lighter dishes and salt-based preparations, including grilled chicken, lemon-roasted lamb, or dishes accented with citrus. Served chilled, around 10°C, it shows the brisk, dry character suggested by its name. Over the second and third day after opening, the fruit notes became even more pronounced, while the gentle fizziness remained.
