Fruity nose of green apples and pears. It has a spicy and refreshing entry, with lots of umami, ginjoka, and fruity spiciness present. Rich and deep, with a short finish. The Shield was made of a historic rice strain, an ancestor of the rare Kameno-o.

Tatenokawa Shield Sōbei Wase Junmai Daiginjō is made of Sōbei Wase rice milled to 50%, a native variety grown in the Shonai region. The 'Kameno-o' rice variety, known as a "phantom sake rice," was developed from Sōbei Wase.
