Tanizakura Junmai Kita no Mori is brewed with 100 % Yamanashi-grown rice and water drawn from the Yatsugatake range. This sake has a smooth, well-rounded character typical of the region.

Pours clear with faint church windows and a lemon-green tint. The aroma shows hints of dried fruit and narazuke, with a slightly greener tone than the brewery's earlier Hiyaoroshi. On the palate, it is crisp and lightly dry, with a touch more acidity. The body feels light and smooth, carrying notes of grain, steamed rice, and a faint marzipan sweetness similar to that found in the Hiyaoroshi. The finish is short and clean, leaving a soft rice aftertaste. Simple, balanced, and food-friendly, it opens up nicely as it warms from chilled to room temperature. Reheated the following day to 45 °C (Jōkan) and 50 °C (Atsukan), it reached its best expression at 50 °C, where gentle chocolaty nuances emerged while keeping its edge and clarity.
