Tamajiman Junmai Ginjō Kuramoto no Kakushizake (限定 火入れ 蔵元の隠し酒), the "master brewer's secret sake," was initially meant to mature until summer. However, upon pressing, it revealed an exceptional balance of vibrant aroma and gentle rice sweetness, prompting the brewmaster to bottle it immediately, declaring it too good to wait. The result is a fresh, unpasteurised sake with a rich, juicy fruitiness reminiscent of melon. It is best served chilled to room temperature.

Ishikawa Brewery is located in Fussa, in western Tokyo, near the banks of the Tama River. It was founded in 1863 and moved its production to Kumagawa, Fussa, in 1881. Ishikawa prides itself on the delicate texture and sharpness of its sake. The brewery is a tourist attraction in Fussa, with a museum, two 400-year-old zelkova trees and a white-walled storehouse of historical value. In addition to sake, the brewery also has a brewery restaurant, Fussa Beer Hut, where visitors can enjoy Tama no Megumi microbrewery, which resumed production in early summer 1998 for the first time in 111 years, as well as Zogura Omusubi, where you can taste sake and microbrewery beer.

Tamajiman's "Brewmaster's Secret" pours a clear, straw-yellow hue with a rich aroma of dried fruit, melon, cereal, and fresh greens. Medium-bodied with a delicate texture, it opens slightly sweet when chilled, followed by a lively acidity and crisp bitterness. The finish is long and well-balanced. Though not a nigori, we noticed some lees floating in the bottle. Only available at Ishikawa Brewery's website and at their brewery.
