Brewed using the traditional kimoto (生酛) method, this sake is produced with attention to detail and careful handling throughout fermentation. It features a gentle, clear aroma with notes reminiscent of banana, offering a mellow richness and a full-bodied flavour that develops in a balanced, rounded way. This sake pairs well with dishes that highlight delicate umami and subtle sweetness, including sashimi, simmered red sea bream head, rolled omelette, freeze-dried tofu, herring wrapped in kelp, and sandfish sushi.

Akita Shurui Seizoh Brewery is located in Akita City and was founded in 1944 when twelve breweries were merged into one, as were most other small and medium-sized companies in the final period of the Second World War to overcome the wartime shortage of ingredients. In 1950, the main brewery resumed operations. Nowadays, Akita Shurui Seizoh has two production facilities in Akita and a rice polishing facility. The brewery has two labels, "Takashimizu" (高清水) for the Japanese market and "Shimizu-no-mai" for the U.S. market.

"Takashimizu" was chosen from 5,037 submissions and translates to "high spring water." In Akita City, "Takashimizu Hill" is famous for its spring water. According to legend, the sacred spring started gushing in the middle of the 7th​ century; the area is also known as the location of Akita Castle, one of the biggest citadels in the extreme north of Japan.

Awards:

Akita Shurui Seizoh Brewery has been awarded Gold medals at the Annual Japan New Sake Awards for fifteen years (as of 2014). Goshono Brewery received Gold medals for eleven years. The brewery was awarded Gold medals at the Tohoku Sake Awards for nineteen consecutive years. During these nineteen years, it won the Top Honour Award five times.

The entry is smooth and full-bodied, with a creamy texture that never feels too heavy. An initial sweetness quickly gives way to lively acidity and rich rice flavours. The finish is clean and medium-length. Well-balanced throughout, it works equally well on its own or alongside food.

Takashimizu's Tokubetsu Junmai is a nice example of kimoto (生酛) brewing done a bit differently. While many kimoto styles tend to be rich and powerful, this one is softer and more delicate. The flavour brings out the natural depth of the rice without being overwhelming. You get a gentle, clean aroma from the yeast, and the taste is smooth with a mellow richness that unfolds nicely; it's well-balanced and pairs well with food, making it an excellent choice for mealtime sake. When gently warmed—around body temperature or a bit hotter —a soft, banana-like note from the yeast becomes more noticeable, giving the aroma and flavour a pleasant shift. It's clean, versatile, and pairs well with a wide variety of dishes. Great for enjoying a relaxed drink with a meal. In warmer seasons, it's also refreshing to serve chilled.
