Pale golden, this sake delivers a rich aroma of steamed rice layered with notes of apple, pear, cantaloupe, and a touch of alcohol. It opens boldly on the palate—full-bodied with a silky, satin-like texture. A hint of sweetness at first gives way to a dry finish accented by a refreshing bitterness. The lingering aftertaste carries a subtle sour tingle. As a Muroka Genshu, it is unfiltered and undiluted, though it has been pasteurized. This Shinshu is a seasonal release, available only from November to March.
