Sawanoi Junmai Hiyaoroshi (澤乃井 純米 ひやおろし) comes from the foothills of Okutama and is released after resting quietly through the summer. The ageing brings out a steady, settled umami with a gentle richness, giving the sake a calm, autumn-leaning character. Its aroma shows clear lactic notes with hints of mushroom, damp wood and a light mineral touch. On the palate, it has a creamy texture and a fairly full body, shaped by lively acidity. The flavour leans towards soft, woody tones with an almost whisky-like edge, while sweetness and bitterness stay low. The finish is short and clean.
At 15% alcohol, with a nihonshudo of +1, acidity at 1.8 and amino-acid level at 1.2, it sits in a balanced, unforced style. Served chilled or gently warmed, it brings out its particular depth and the mellow umami that develops over summer. It suits the season's food well, especially grilled fish such as sanma, simmered mushroom dishes, and other autumn plates where umami plays a central role.

The brewery offers free tours lasting about 45 minutes that include sake tasting. Visitors can see the spring water pouring from vertical holes dug 140 metres into the Chichibu rock formations. The brewery organises English tours several times a month. The tours take place daily (except Monday, 08:00-17:00). The brewery has its garden on the banks of the Tamagawa, Sawanoi-en (澤乃井園, Sawanoi Garden), where visitors can sit, eat, enjoy sake and buy souvenirs.
