A striking yellow hue and an intense, complex nose with notes of dried fruit, grains, rice, and narazuke pickles. The palate opens lighter than the aroma suggests—smooth and medium-bodied—with subtle sweetness evoking steamed rice and chocolate, a touch of earthiness, and a beautifully balanced profile of acidity, umami, gentle bitterness, and cocoa-like sweetness. The finish is long, with lingering acidity and cacao tones. An exceptionally well-crafted Kimoto sake, enjoyable across a broad range of temperatures. While it began chilled, its full character truly shines at room temperature.
