Kokonoe Saika Brewery in Kinokawa, Wakayama Prefecture, was founded in 1908 by Saika Toyokichi (雜賀豊吉). The brewery manufactures and sells vinegar, vinegar-based products, sake, liqueurs, miscellaneous alcohol, other brewed alcohol, soft drinks, and food products. Across Japan, Wakayama has the highest vinegar consumption per household in Japan. Kokonoe Saika was founded as a brewer of "red vinegar" in a prefecture known as the birthplace of sushi. The brewery has always focused on the vinegar culture of Wakayama and brews sake, which goes well with sushi, vinegared dishes, and other Japanese cuisine.

Kokonoe Saika's Junmai Yamahai has a pronounced sweetness on the nose, with prominent notes of dried fruits such as plums, figs, dried apricots, and bananas. The initial impression is gentle and smooth yet possesses a rich and deep underlying character. Despite its dryness, the mouthfeel has a velvety texture, refreshing acidity, and a pleasant fruity sweetness. Flavours of green apple and earthy aromas gently unfold and spread across the palate. The finish is medium, culminating in a distinct and invigorating sour tingle—exceptional.
