It is a unique gem and not as "super spicy" as some might think: the aroma is refreshing with fruity hints of banana, citrus, and muscat. It starts mellow with noticeable acidity and a touch of effervescence. The vibrant mouthfeel is marked by pronounced dryness, citric acidity, and bitterness. Named "chokara" for being "very dry," it becomes milder at room temperature, revealing some sweetness while maintaining its dry and spicy character. This sake pairs perfectly with savoury dishes.
