Miyasaka's Junmai Gingo presents a gentle sweetness with hints of lactic character and a delicate ginjōka. On the palate, it opens smoothly yet with an elegant richness; medium body and a subtle effervescence. The initial mouthfeel reveals a fruity sweetness, gradually unfolding into umami layers and a lively, rising acidity. A refined bitterness derived from the rice adds further complexity and depth; the finish is clean and sharp, showcasing the distinctive qualities of Miyamanishiki rice.
