Minami Brewery is located at the entrance of Yasuda Town in eastern Kōchi Prefecture. To the south lies the Pacific Ocean, while a range of forested mountains dominates the northern view. The Yasuda River (安田川), known for its clear waters where wild ayu (sweetfish) swim, flows through the town from north to south. Rice fields extend up into the hills, surrounded by clean air and abundant sunlight. The surrounding natural environment forms a defining feature of the area. Yasuda has a long history of sake production, with local breweries traditionally using water from the Yasuda River for brewing. This water originates in the forests of Yanaise (魚梁瀬), located far to the north. It reaches Yasuda after a long, natural journey. It is mineral-rich and considered well-suited to brewing sake with a soft yet distinctive character. Working with the region's natural resources, brewers in the area continue to produce sake that reflects the local climate and environment, combining traditional methods with the qualities of the southern landscape.

The aroma is fruity, featuring hints of citrus and floral tones. Sweet undertones of caramel and honey are noticeable. The palate opens gently with a soft texture, offering fruity sweetness alongside subtle spice, a clean dryness, and a distinct rice flavour. The finish is long, marked by a mild bitterness and smooth nuances reminiscent of cocoa and dark chocolate. Its dry, crisp profile pairs well not only with seafood but also complements grilled meats effectively. A brilliant specimen of Tosa sake!
