Kurumazaka's Junmai exhibits the character of a well-aged sake. The aroma is understated, with subtle hints of dried fruits and a touch of graininess. It's initially smooth and mellow on the palate, with a gentle sweetness that gradually gives way to a slight astringency and a refreshing bitterness. The finish is clean and lingers with a touch of acidity. When warmed, the sake softens further, becoming more rounded and approachable. We found this sake most enjoyable at room temperature or gently warmed.
