Kozaemon Junmai Ginjō Banshu Yamadanishiki is made with Yamadanishiki rice grown by Masatoshi Yamada in Hyōgo Prefecture. Aromata are moderate and clean, with notes reminiscent of pineapple and muscat grapes.

The nose boasts clear fruit notes, with hints of strawberry and pineapple, alongside a gentle alcoholic spice—clean and smooth entry, with a silky texture and a medium+ body. The mouthfeel remains light and refined, offering fresh, fruity notes and a faint bitterness reminiscent of muscat grapes. Ageing at near-freezing temperatures gives the flavour a firm, well-defined shape, which carries through without heaviness and finishes crisp and dry. The aftertaste is very short, leaving an overall impression of restraint and balance rather than intensity.
