The pineapple aroma is pleasant, but the flavour is slow to emerge. It has alcohol and umami nuances, but they are not very intense. It has a slight bitterness and a faint aftertaste. At lukewarm temperature, it is more acidic with a sour pineapple note. It has more umami, acidity, and bitterness, but they fade quickly. It is better to drink it fast while it lasts. The warm sake has the most lasting umami. Not bad, but we'd hoped for a little more punch.
