Koyama Honke Tōkyō Zakari Junmai Ginjō (東京盛 純米吟醸) is made of Yamada Nishiki, the king of sake rice, and has a delicious yet gorgeous and easy-to-drink taste. The label "Tokyo Zakari" (東京盛) was born in the Taishō era in hopes of the prosperity of Tōkyō. The label's design is based on the motif of a "masu," a small wooden box traditionally used for measuring rice and sake, with the modern-day ichigōmasu being the equivalent of 1 gō (180ml). The Chinese character "masu" (升) means "increase" or "benefit" and has long had auspicious meanings such as "increase in happiness" and "increasing prosperity."

Koyama Honke Brewery is located in Saitama City, Saitama Prefecture. It was founded by Koyama Yamatabei (小山屋又兵衛), who hailed from Harima in modern-day Hyōgo Prefecture. After learning the art of sake brewing in Nada, Itami and Fushimi, he moved to the Kantō region around 1780. He set up a sake brewery in Sashiōgi, Adachi-gun (present-day Sashiōgi, Saitama City) 1808.
In the 1980s, the company introduced computer-controlled sake brewing technology and biotechnology to develop sake yeast. In 2003, Koyama Honke began to export sake overseas, and in 2008, it was designated as a traditional sake brewery by Saitama City. The company chairman, Koyama Keiichi, doubles as chairman of the Saitama Sake Brewers Association and head of the Kantō Shinetsu branch of the Japan Sake Brewers Association. The brewery is part of the World Takakoyama Group, which consists of five sake breweries nationwide. Each of these operates as a separate company to take advantage of the uniqueness of sake brewing technology in each region.
