Kaiun Asaba Ichimangoku Junmai Ginjō Yamadanishiki Namazake (開運 あさば一万石 純米吟醸 山田錦 生酒) is made with Yamadanishiki rice grown in the Asaba district of Shizuoka. Brewed by the historic Doi Shuzōjō in Kakegawa, this small-batch junmai ginjō celebrates the rich legacy of Asaba, a region once famed for producing over 10,000 koku of rice during the Edo period . Made with premium Yamada Nishiki rice grown in the very fields of Asaba and brewed with spring water drawn from the mountain that once guarded Takatenjin Castle, this unpasteurised (namazake) release offers refined fruity notes, a soft mouthfeel, and a crisp finish. With just one tank brewed, this is a local sake full of character, history, and craftsmanship – ideal for pairing with seasonal dishes and enjoying chilled throughout the year.
