In 2022, Doi Sake Brewery celebrated a remarkable 150-year legacy: founded in 1872 by Doi Yaichi (土井弥市), it defied the odds of Onuki's challenging terrain, renowned more for its historical battles than for its abundant water. Through ingenuity and perseverance, its water was transported from the distant Takatenjin mountains, a tradition the brewery honours today with modern methods. Building upon this 150-year foundation, Doi is committed to preserving its time-honoured traditions while embracing the future.

Doi Sake Brewery is also making waves on the international stage. As the demand for Japanese cuisine soars globally, so does the appetite for sake. The brewery has actively participated in the prestigious International Wine Challenge (IWC) in London, where it clinched the highest honour in the Ginjō category in 2017. This coveted trophy signifies a global recognition of Doi's exceptional sake-making prowess.

Doi Shuzōjō envisions a world where sake is enjoyed as widely and diversely as wine, emphasising its versatility and encouraging pairing it with various cuisines beyond traditional Japanese fare. Doi's commitment to quality is evident not only on the international stage but also domestically. For three consecutive years, the brewery has secured the Governor's Award at the Shizuoka Prefecture Sake Appraisal, solidifying its position as a leading sake producer in Japan.

This Muroka Namagenshu, crafted from the elusive Aizan rice, is a winter treasure. Produced in limited quantities, this sake is a testament to the brewer's skill in coaxing the best from this rare grain. The aroma is a captivating blend of ripe cantaloupe and a bold alcoholic kick. The sake is full-bodied and complex on the palate, with a rich sweetness reminiscent of ripe melons. This sweetness is beautifully balanced by an invigorating spice and a subtle acidity. The finish is long and gentle, with a lingering bitter note that adds depth and complexity—a truly exceptional sake.
