Kaito Otokoyama's "hidden sake" is a unique example of a Junmai aged for a year in cold storage before pasteurization and bottling. The nose is fruity and sharp with a subtle alcoholic note. Full-bodied and viscous on the palate, boasting flavours of ripe fruit and moderate sweetness and dryness. Medium finish with slightly bitter notes and refreshing acidity. The year-long ageing process results in a complex and well-rounded sake.
