Jōzen Josui Junmai Ginjō (新米新酒の上善如水 純米吟醸) is made of rice grown in Niigata and milled to 55% and Association No. 1801 yeast. This unpasteurised "sake nouveau" was made from rice harvested last autumn. Freshly squeezed, this Niigata sake has a vivid aroma and robust flavour that can only be achieved with unpasteurised sake. It exhibits a crisp, lean, and dry profile characterised by an initial, familiar clarity. This swiftly gives way to a juicy richness underscored by a profound umami character. It proves to be an exceptional accompaniment to dishes featuring hearty seafood and vegetables.

Shirataki Shuzō was founded in 1855 by Minatoya Tōsuke (湊屋藤助). The brewery served travellers and peddlers in Yuzawa, a strategic hub on Mikuni Kaidō (三国街道) linking Echigo and Edo on the Nakasendō. Echigo-Yuzawa, the setting of Kawabata Yasunari's 'Snow Country', is located in the Uonuma region of Niigata Prefecture, an area with one of the world's heaviest snowfalls. Plenty of snow melts in spring and seeps into the ground, becoming limpid groundwater over fifty years. The water drawn from three wells on the brewery's property is soft water suitable for brewing and used to make the company's sake.
