Ishikawa Tamajiman Hamura (多満自慢 はむら) is a regular sake (futsushu) made with rice grown in Hamura and Hamura water. Hamura is a small town in west Tokyo close to Ishikawa Brewery.

Hamura boasts a unique agricultural cycle. Its fertile land supports tulip cultivation during the cooler months and rice cultivation during the warmer months. This local sake is crafted using carefully grown rice and the region's naturally pure underground water. The brewery also demonstrates environmental consciousness by recycling sake lees (the leftover solid matter after sake pressing) as a valuable fertiliser for rice fields.

Ishikawa Brewery is located in Fussa, in western Tokyo, near the banks of the Tama River. It was founded in 1863 and moved its production to Kumagawa, Fussa, in 1881. Ishikawa prides itself on the delicate texture and sharpness of its sake. The brewery is a tourist attraction in Fussa, with a museum, two 400-year-old zelkova trees and a white-walled storehouse of historical value. In addition to sake, the brewery also has a brewery restaurant, Fussa Beer Hut, where visitors can enjoy Tama no Megumi microbrewery, which resumed production in early summer 1998 for the first time in 111 years, as well as Zogura Omusubi, where you can taste sake and microbrewery beer.

Inviting aroma with prominent notes of ripe pear, fig, and banana, complemented by a touch of lactic sweetness and a subtle cereal undertone. It's initially gentle and off-dry on the palate, with a refreshing acidity and a savoury umami character. The medium alcohol and medium-plus body create a velvety mouthfeel. Flavour-wise, expect a medium intensity with a delightful balance of lactic notes (think milk and fresh cream), ripe pear, and a hint of dried apricot. The finish is medium-length and leaves a pleasant impression.

We also tried it warm. Heating brought out a sweeter profile while retaining a touch of spice. Interestingly, warming also introduced subtle green notes of oak and dried leaves alongside the existing cereal character. We found the warm version particularly enjoyable!
