Heiwa Junmai Ginjō Kido Hiyaoroshi

Heiwa Junmai Ginjō Kido Hiyaoroshi is a seasonal sake made with Gohyakumangoku rice polished to 50% for the kōji and 55% for the kakemai. The sake is brewed in early spring, then matured slowly through the summer to reach full balance by autumn.

Fragrant, gently sweet nose combining notes of strawberry and white peach, touched by a faint ginjōka sharpness and a trace of alcohol. It begins softly and smoothly, broadening into a full-bodied expression rich in umami. The flavour deepens as it spreads, revealing the mellow, rounded quality of a well-aged sake. A subtle sweetness and gradually emerging acidity add balance and complexity, leading to a clean, lingering finish.

Tasted chilled, at room temperature, and finally warmed to about 50 °C (熱燗 atsukan), it retained its lively acidity and fruit tones while developing a creamier texture when heated. Exploring it across temperatures proved a rewarding way to explore how its flavour profile evolves with warmth and time!
